I started this blog with the intention of making a good shared recipe site. These are all recipes which I have found, cooked, ate and loved (also that my 2 going on 3 picky eaters loved as well: my husband, 6 yr old son and 3 month old daughter). Bacon Cheeseburger Pizza

OK So this one was a hit. My son was a little skeptical, he's a separate my food kind of guy so Pizza and casseroles are hard to get him to try. But he liked this one. I almost forgot to take a picture, so below is only HALF of it! I like to use this recipe when we have left over bacon from breakfast. Ziploc bag it up and chop for this recipe for lunch or dinner.

Bacon Cheeseburger Pizza


1 can refrigerated Pillsbury pizza dough
2 lbs extra lean ground beef
1 small jar sun dried tomato pesto
1/3 c shredded parmesean cheese
1/2 small yellow onion chopped
1 c. shredded mozzarella cheese
1 c. shredded cheddar cheese
1 clove minced garlic
5 strips cooked bacon chopped or 1/2 c. real bacon bts
(you can add any other toppings you like)

1. Brown meat and drain grease.
2. Prepare Crust according to package directions
3. Sprinkle crust with Parmesean cheese
4. Spread entire jar of pesto on pizza dough for base sauce)
5. Top with meat, bacon and onions and any other toppings you like.
6. Top with Cheeses
7. Cook according to package directions.

Pepperoni Pizza Pasta

This one was a hit, well with the hubby my son doesn't seem to care for thick noodles, he's an angel hair kinda guy. So if your kids like pizza and macaroni noodles then this should rock the dinner table. You can also add any other pizza toppings you like to this so experiment and post what you added to yours.

Pepperoni Pizza Pasta


1 1/2 c. uncooked elbow macaroni
2 eggs, lightly beaten
1/3 c. grated Parmesan cheese
1/4 c. sour cream
1/2 tsp. Italian seasoning
1 1/2 c. pizza sauce
2 c. shredded mozzarella cheese
30 slices pepperoni
1 can (2.25 oz) sliced black olives


Cook macaroni according to package directions; drain. Stir in the eggs, Parmesan cheese, sour cream and Italian seasoning. Transfer to a greased (I used butter to grease) 11"x7" baking dish (or any casserole dish). Bake at 375* for 10 minutes.

Spread with pizza sauce. Sprinkle with mozzarella cheese; top with pepperoni and olives. Bake 10-15 minutes longer or until cheese is melted. Let stand 10 min before serving.




Tuna Zucchini Cakes

Okay, so if your kids likes fish sticks then they will probably eat this. My kid loves anything that comes in patty form. You take any kind of ground meat and shape it up to look like a hamburger he will eat it. Guess I'm lucky. This isn't the healthiest meal, since it is fried, but it does have veggies snuck in. My fam gave it an A+ I served it with pasta salad and creamed corn (all we had so not the best grouping LOL) they dipped it in ketchup but would probably be good with any fish sauce.

Tuna Zucchini Cakes


1/2 c. finely chopped onion
1 tbsp. butter
1 can (6.5oz) light water packed tuna, drained and flaked
1 c. shredded zucchini
2 eggs lightly beaten
1 tbsp of dried parsley (or you can use 1/3 c fresh minced)
1 tsp lemon juice
1/2 tsp salt
1/8 tsp pepper
1 c. seasoned bread crumbs, divided ( I used plain but you can experiment or take your favorite flavored crackers and beat the crap out of them in a ziploc bag)
2 tbsp vegetable oil


In a small saucepan, saute the onion in butter until tender. Remove from heat. Add the tuna, zucchini, eggs, parsley, lemon juice, seasoning, and 1/2 c. bread crumbs. Mix well. Shape into patties and coat in remaining bread crumbs (they will be delicate so you may want to move them using a spatula). In a large skillet, heat oil on medium, cook the patties for 3 min on each side or until gold brown.
